Example: fried rice puffing production line
1. Raw material formula
(1) Main formula
Rice flour accounted for 90%, starch 8%, milk powder 2%, in addition according to the process to add appropriate seasoning
(2) Seasoning formula
① Seafood flavor
Dried shrimp powder 10%, salt 50%, anhydrous glucose 10%, dried shrimp flavor 10%, scallion powder 5%, MSG 10%, ginger 3%, soy sauce powder 2%.
② Chicken scent
Salt 55%, MSG 10%, anhydrous glucose 19.5%, chicken flavor 15%, white pepper 0.5%.
③ Spicy flavor
Chili powder 30%, pepper 4%, refined salt 50%, monosodium glutamate 3%, five spice powder 13%.
2. Technological process
Rice → Select and remove impurities → clean → Crush → Mix → Stir with water → puffing → Cool → cut into sections → frying → Seasoning → Packaging → Finished product
3. Main equipment
Stone remover, crusher, blender, grain expander, electric fryer or iron pot, sealer.
4. Operation points
(1) Select carefully. Remove sundries, select rice, remove sand and other sundries.
(2) Mix the raw materials and put them into the crusher for breaking. The raw materials are fully mixed according to the requirements specified in the formula, and then mixed with water while stirring, the water amount is about 30% of the total amount.
(3) Start puffing. Before the puffing machine is started, some rice flour with more water is put into the machine, and then start the puffing machine, so that the wet material is not puffed, and it is easy to pass the nozzle. After the machine runs normally, add semi-dry powder with 30% moisture. After the strip, if it is too bulky, it means less water is added. The strip is soft, non-elastic and non-bulking, indicating too much water content. Both should be avoided. It is required that the strip is semi-puffed, elastic and has uniform holes. If the product is not qualified, it needs to be put into the machine again.
(4) Cooling. Cool the semi-finished product from the machine for a few minutes, then cut it into small pieces with a knife.
(5) Fry. When the oil temperature is 130 ~ 140℃, the puffed rice crust is poured into the frying machine for frying. Frying time is 3-5 minutes, automatic flip type fryer, with automatic stirring system, can be into the pot of raw materials, white before the pot, put a period of time to turn yellow and white.
(6) seasoning and packaging. When the fried rice crust is out of the pot, the fried rice crust is put into the mixing machine for mixing materials, and finally the seasoned rice crust is automatically measured and packaged.
