Extruded puffed food refers to the puffed food made by crushing, mixing, adjusting humidity and feeding the raw materials into the extruder. The material is cooked at high temperature in the extruder and passed through a specially designed die hole. In actual production, it is generally necessary to bake or fry the extruded food to reduce the moisture content of the food, prolong the storage period of the food, and obtain a good flavor and texture of the food; Requirements for extruders, prolonging the life of extruders, and reducing production costs. The general technological process of extruded puffed food includes: raw materials→mixing→conditioning→extrusion cooking, puffing, cutting→baking or frying→cooling→seasoning→weighing and packaging. Specifically, various raw materials with different proportions are fully mixed in advance, and then sent to the extruder, and an appropriate amount of water is added to the extruder, and the total water content is generally controlled to be about 15%. The screw speed of the extruder is 200-350rmin, the temperature is 120-160°C, the maximum working pressure in the machine is 0.8-1mpa, and the residence time of food in the extruder is 10-20s. After the food passes through the die hole, the volume of the food expands rapidly due to the rapid escape of water vapor. At this time, the moisture in the food can drop to 8% to 10%. In order to facilitate storage and obtain a better flavor texture, it needs to be baked, fried, etc. to reduce the moisture content to below 3%. In order to obtain puffed food with different flavors, seasoning treatment is also required, and then under low air humidity, the puffed and seasoned product is cooled by a conveyor belt to remove part of the water (currently, the general finished product cooling and packaging workshop has air conditioning equipment) and then immediately for packaging.
