After pretreatment such as destruction, humidity adjustment, mixing and preheating, the material is forced to pass through a specially designed die orifice with the help of the driving force of the kneading screw to form a product with a certain shape and structure, which is called kneading processing.


The basic principle of kneading and puffing is: the grain material containing a certain amount of moisture is sealed in the extruder and heated, pressurized or mechanically acted to keep the material in a high temperature and high pressure condition. Under this condition, all the tissue components of the material have accumulated a lot The energy of the material becomes soft. The water is in the state of overheating. When the material comes out of the kneader, the pressure is suddenly reduced, the water in the material is instantly vaporized, and the volume rapidly expands. When the structure reaches the elastic limit, the bubbles burst, the hot steam escapes, the internal pressure drops, the bubbles gradually collapse, and the walls of the bubbles connect, but the process stops long before it has recovered to its original density. This is because the dough loses moisture and the temperature drops, the entire structure hardens and the porous, loose sponge structure is fixed.


The change in grain volume microstructure can be indicated by the degree of puffing. The puffing degree refers to the volume increase multiple of the puffed product.


Under normal circumstances, the puffing degree is above 5, and the taste of the product is relatively loose. According to different process requirements, the puffing degree can be controlled between 10 and 20.
